Clean Protein Granola

When I’m going crazy trying to complete the myriad tasks of a busy day (and which ones aren’t?), I am super dependent on my clean protein granola. This is a staple in my house that I make every week. It’s easy to throw together, packs a protein punch that makes me feel energetic, fantastic for digestion, fills my belly for a satisfaction fix, and has a delicious, rich crunchiness that makes it a treat. I put a small amount of oats in my granola to give it some carb power for extra energy, but you can easily substitute gluten free oats or leave them out. I’ve made this granola without oats many times and it holds together just as well.


1 1/2 cup Flax Seeds
1/2 cup Sunflower Seeds
1-2 scoops of Protein Powder (I used Cellucor Whey Protein, Whipped Vanilla)
1 1/2 cups Unsweetened Coconut Flakes
3 tbs cocoa
1 tbs honey (substitute stevia or omit)
Pinch of Salt
1/4-1/2 cup pasteurized egg whites (enough liquid so that the mixture holds together but isn’t runny)
Line a rimmed baking sheet with parchment paper. Mix everything together in a bowl, toss into the lined baking sheet, and press flat.
Throw it in the oven at 200 and cook for a couple of hours or until it is very firm and dry. Flip with a spatula. It will probably break apart into large pieces. That’s ok. Cook it until the other side is completely dry and crunchy. Break it into large pieces for munching. Feel free to taste test it at any time cause the egg whites have been pasteurized. It will keep for a week or so in an airtight container.
